Restaurant “Wines by the Glass” Program
Our wines have been produced from hand selected grapes grown on vineyards of friends and family throughout Madera County. Each wine represents our family’s commitment to sustainable farming practices and once again this year’s harvest has fueled our passion for this wonderful place we call home. It is my hope that the love and care that have gone into every bottle will enhance the cuisine you prepare and serve to your friends, clients and your own family. To this end, I ask that you consider our wines for your “top shelf” wine-by-the-glass list.
Knowing that the marketing of a top shelf wine requires support from the producer, I’d like to extend my help to you in the form of employee training, my presence at vintner dinners, large format display bottles, and discounts on multiple case buys. Please consider our wine for your wines-by-the-glass program and if you’d like to discuss any additional ideas with me personally, I am always available to you. Most importantly, I appreciate you tasting our wines and making them a part of your business.
For over seventy years our family has been making traditional wines of exceptional quality from our family’s vineyards in Central California. Our passion for great food and wine inspired us to not only produce our own wines, but also manufacture gourmet old world Italian wine vinegar at our family owned and operated winery. The delicious, sweet characteristics of our vinegar adds a fantastic flavor to everything we prepare in our kitchen and enhances the taste of the wines we pair with the foods we serve. Our family and friends loved our vinegar so much we decided to make them part of our business too! Since 2002 we have been selling our vinegar commercially. Because I hope you try them the next time you fire up your grill, make a salad and open a bottle of our wine I’ve asked our salespeople to bring you a sample to try at your leisure. Salute & Bon Appetito!

PACIFIC CREST Winery

The Nonini FAmily
In 1878, Antonio Nonini was born in the Lake Como region of Northern Italy. At the age of 21 he came to California and being experienced in the art of winemaking, he brought grape varieties from the old country with him. Many of these varieties are still in existence today. After prohibition, Antonio started his winery, the A. Nonini Winery on Dickenson Avenue in Fresno, California, which began by producing traditionally-styled Italian wines. Since then generations of his family have been involved in the wine industry as winery owners, grape growers, and nursery men. Antonio’s grandson, Martin Nonini, continues the family tradition by offering limited production, hand-crafted wines of uncompromising quality under the Pacific Crest Winery label. Pacific Crest Winery is the embodiment of this wonderful family tradition and we hope you love all of our beautiful wines! The full line is now available for your enjoyment and all of us at Pacific Crest Winery hope you enjoy our wines as we are dedicated to providing you with world class, limited production, hand-crafted quality wines from Madera County. Salute!
History of “PACIFIC CREST WINERY”
Martin A. Nonini, the owner and winemaker at Pacific Crest Winery, has roots that go way back in the wine industry to working for his family’s winery, the old A. Nonini Winery on Dickenson Avenue in Fresno County. There, “Marty” learned the wine business from the field to winery as he worked for his uncle, Reno Nonini. While Martin’s two uncles, Reno & Gildo, stayed in the winery end of the family business, Geno, Martin’s father, chose another avenue related to the grape industry. In 1958 he established Ge-No’s Viticulture Nursery, and with his young family he built the business into one of California’s largest suppliers of certified virus-free grapevine material. Being intimately tied to the vineyards of California through his family’s nursery venture, and having close family ties to the wine business, it only seemed natural to Marty to start making some wine. A native of Fresno/Madera, California, Marty and his wife, produce a limited selection of wines under the “Pacific Crest Winery” label as well as a gourmet Italian red wine vinegar under the “Tuscan Old World” brand. Their family owned and operated winery is located just off Avenue 9 between Highway 99 and Highway 41 in Madera County, California. The tasting room is open daily by appointment, so just call ahead if you’d like to stop by and taste some wines.
Winemaking
“With advances in technology came consistency and I believe in a combination of old world and new world winemaking techniques in the production of all of our wines. This means using a balance between new and neutral European oak as well as stainless steel. I source our fruit from different vineyard locations to achieve balanced acidity, ph, and fruit to capture different flavors and terroir profiles. I am totally committed to 100% natural processes in the production of our wines and I like to use extended macerations with our reds and age them for up to 20 months before release. Most importantly, I love working with small lots to create finished blends that will give me the exact flavors I'm looking for in each varietal wine we do. In the end, my hope is that by exposing the grape through varied technique that I can capture the unique flavors I find so wonderful and express them in the finished wine.” – MARTIN NONINI
Our Vineyards
For over 30 years Martin Nonini and his wife have been making “limited” quantities of Madera County wines for family and friends. They decided to make it a way of life in 1989 when they purchased the 50 acre Steffan family ranch which had been part of the 4,500 acre Albonico Ranch near the Madera Ranchos community just north of Fresno. Pacific Crest Winery's much anticipated first commercial release was in 1998 and as a testament to the quality of the vineyards they maintain each limited production vintage since has sold out! The wines of Pacific Crest Winery come from the vineyards of family and friends throughout Madera County, CA. By working closely with select vineyard growers, and maintaining our own vineyards, Marty has been able to select small lots within a vineyard, down to a single row, to produce the finest wines of true varietal character and terroir. With one of the most consistent growing seasons in California, Madera County wines have continued to excel in a very competitive industry and become world renown for its beautiful fruit. Our credo, has and always will be, to take the best possible fruit and make the best wine possible from the grape. Enjoy!

| Winemakers Comments |
We gently pressed the whole clusters and then fermented in Stainless Steel. I like exposing the true flavor of the grape in all my white wines so I almost always use stainless steel to age and preserve the lush fruit flavors. This wine expresses notes of pear, citrus, mango, pineapple and mineral. Serve with grilled fish, chicken, salads, seafood pasta and cheeses. |
Harvested at 25 brix, we crushed the fruit and left on the skins throughout a cool fermentation in an old world fermentation tank. This process preserved the bright crisp flavors and aromas of chocolaty spice, leather, currant, cherry, and smoke. The color and body of this huge red are exceptional. Tastes great with stews, grilled meat, red sauces, prime rib and tri-tip. |
After an extended maceration, we firmly pressed the wine for aging into Hungarian, American and French Oak barrels. We aged the wine for 24 months on oak. A big style Merlot with flavors of toasty mocha, cedar, black cherry, leather and vanilla. This wine goes well with hearty pasta dishes, grilled meats, lamb and wild game. I even like it with a banana split! |
Harvested at 24 brix and fermented in Stainless Steel. After an extended maceration and 4 day cold soak we pressed the wine for a 24 month ride in neutral Hungarian, American and French Oak barrels. An elegant style with flavors of plum, currant, leather, black cherry and vanilla. This wine goes well with grilled meats, pork pasta dishes and veal. Don’t ever forget your pasta and don’t pass on dessert!!! |
Harvested at 25 brix, we crushed the fruit and left on the skins throughout a cool fermentation in a redwood fermenter. It was aged in oak for 36 months. This process preserved and intensified the smoky flavors and aromas of chocolaty spice, leather, currant, and cherry. The color and body of this huge red are exceptional. Tastes great with stews, grilled meat, red sauces, prime rib and even a burger. Very versatile wine! |
